- 1/2 bunch each basil and cilantro, stems and leaves separatedEst. price €0.70–€1.50
Steps
- 1Prepare a medium-hot fire on a charcoal grill or preheat a gas grill to medium-high heat. Score the fish by making one long cut down to the bone and two more cuts crosswise, evenly spaced apart. Repeat this scoring process on the other side of the fish. Season both the cavity and skin of the fish with salt, then generously drizzle 1/4 cup of oil over it. Fill the inside of the fish with some lime slices (keeping a few aside for garnish) and herb stems to add flavor.
- 2Prepare the grill grate by cleaning and oiling it thoroughly. Place the fish on the grill, ensuring not to move it around until the skin becomes crispy and charred, and the flesh turns flaky and opaque near the bone. Depending on the size of the fish, this process can take anywhere from 6 to 15 minutes. Avoid flipping it prematurely. Once ready, slide a metal spatula underneath the fish for support (using metal tongs on top can also help). Carefully lift and roll over to cook the other side. Allow it to cook for another 6-15 minutes until the flesh is flaky and opaque near the bone. To check for doneness, use a small knife to see if it easily pierces through the thickest part of flesh. If needed, continue cooking either on the grill or in a preheated 450°F oven until done.
