Steps
- 1
Start by heating 1 teaspoon (5 mL) of oil in the inner pot using the Sauté function set to High. Allow the oil to shimmer for about 1 minute. Next, add in the coconut, coriander seeds, chana dal, peppercorns, fenugreek seeds, cinnamon stick, cloves, asafoetida (if preferred), and dried chile. Sauté the mixture for roughly 2 minutes until it becomes fragrant. Once done, transfer this flavorful blend to a clean coffee/spice grinder and grind it into a fine powder.
- 2
Begin by heating the remaining 5 teaspoons (25 mL) oil in the inner pot using the Sauté function set to High until it shimmers, which should take about 1 minute. Introduce the onion, salt, green chiles, turmeric, and mustard seeds into the pot and sauté for approximately 2 minutes until you notice the mustard seeds starting to pop. Next, mix in the rice, lentils, squash, and mustard greens until well combined. Incorporate the toasted spices followed by pouring in the broth. Seal the lid tightly and pressure cook on high for 3 minutes.
- 3
After finishing the cooking process, allow the pressure to naturally release for 10 minutes before performing a quick-release to release any remaining pressure in the pot.
