Steps
- 1Create 3 to 4 incisions on both sides of the fish, running from top to bottom. Season the cuts with salt and generously season the inside cavity of the fish with salt too. Allow it to rest as you get ready with the remaining ingredients. Preheat the oven to 450°F.
- 2Insert half of the garlic slivers into the cuts on the fish. Massage a small amount of olive oil onto the fish and pour the remaining oil into a spacious baking dish. Arrange lemon slices at the base of the pan and sprinkle most of the oregano over them. Place the fish on top, then scatter onions and the rest of the garlic around it. Drizzle wine over everything and season with salt and pepper. Finish by sprinkling on the remaining oregano.
