As soon as it starts simmering, remove from heat promptly. Remove the kombu from the saucepan and discard it. Add bonito flakes into the liquid and gently stir to submerge them completely. Bring the mixture to a gentle boil, then reduce the heat and let it simmer for approximately 5 minutes. After that, remove the saucepan from heat and let it steep for 15 minutes to extract maximum flavor for your broth or dashi.
