Steps
- 1Start by placing shrimp shells in a medium saucepan and covering them with water. Remember to refrigerate the shrimp for later use. Bring the mixture to a boil over high heat, then lower the heat to simmer gently for 25 minutes, skimming off any foam that forms on top. Strain the stock through a fine-mesh sieve into a large bowl and keep it aside for later use.
- 2Begin by heating 3 tablespoons of oil in a large, heavy pot over medium heat until it is hot but not smoking. Proceed to add the bell pepper, half of the onion, half of the celery, half of the carrots, half of the garlic, jalapeños, orange zest, 3 sprigs of thyme, 2 bay leaves, 1 1/2 sprigs of parsley, 1 tablespoon of salt, and 1 teaspoon of pepper to the pot. Cook these ingredients together until they are tender which should take approximately 10 minutes. Once the vegetables are tender, introduce tomatoes and 1 1/4 cups of wine into the pot and let them simmer for about 3 minutes. Following this step, pour in shrimp stock and just enough water to cover all the vegetables. Allow this mixture to simmer for another 20 minutes. After simmering is complete, remove and discard the parsley sprigs, thyme sprigs, and bay leaves from the pot. Next up is blending - carefully transfer batches of this mixture to a blender and blend until smooth. Keep this pureed mixture warm before serving.
